Octopus. OCTOPUS!

The Octopus.
Everybody's favourite mollusc.
And if it's not it should be.
Here's why:
Octopi are supper intelligent, they have been shown to posses both long term and short term memory.  They have a very complex nervous system which is centred in the brain but over two thirds of their neurones are in the legs.
Oh yeah and they have three hearts...
They can manipulate the shape of their body's  and the colour of their epidermis to disguise them selves as pretty much what ever they like.
They can shoot ink at you to escape and drop their limbs when ever they like..
And they can taste anything their suckers touch

Obviously I'm not the only one that like these eight legged molluscs, scientists are extra nice to them too.
Unlike other invertebrates it is against the law to operate on them with out anaesthetic.
And they are 'honorary vertebrates' in the animal cruelty legislation.
